Broiled Tomatoes on the Vine—the absolute best side dish for steak!!

This is my absolute all-time favorite side dish for steak. True, I LOVE creamed spinach and broiled leeks, but summer tomatoes ripened on the vine, broiled with garlic and fresh herbs … sublime. That’s all I can say.

Broiled Tomatoes with Garlic

PREP TIME: 15 minutes | COOK TIME: 10 minutes

  • Tomatoes, as many or as few as you want
  • Garlic, whole cloves cut into thirds
  • Fresh herbs (rosemary or thyme)
  • Olive oil
  • Parmesan, grated
  • Salt and pepper

Peel garlic cloves and cut the large ones into thirds, smaller ones in half. Sauté in olive oil for about 5-6 minute or until browned. Remove from heat and set aside. Place tomatoes on a baking sheet, make a small knife slit in each one (otherwise they’ll explode), drizzle with olive oil, add sprigs of fresh thyme and or rosemary. Add a little shaved parmesan and broil for 5-6 minutes. Add the garlic and serve. Enjoy!!
